Chickpea Salad

One of the things I always crave is a tuna salad sandwich. Now that I am trying to eat more plant based meals, this has been my go to alternative. It is just as easy to throw together and just as delicious. I usually eat this in a sandwich with some lettuce, tomato, and a vegan cheddar slice, but it would be great anywhere you would typically use a tuna salad.

Chickpea Salad

  • Prep time: 5 minutes
  • Servings: 4

Ingredients

  • 1 can (540 ml) chickpeas; drained and rinsed

  • 1/2 cup vegan mayonnaise (I prefer Hellmann’s)

  • 2 green onions; finely chopped

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika

  • salt and pepper to taste

Directions

  1. Place the chickpeas in a medium sized bowl and smash with a fork until you reach your desired texture. It is ok to have some bigger pieces left.

  2. Add the remaining ingredients to the bowl and mix to combine. Season to taste.

  3. Serve in a sandwich, wrap, or anywhere else you would normally use tuna salad.
